Boozy Soup du Jour

The Yale Daily News has a recipe for vodka soup, which doesn’t sound half bad. What’s more amusing are the comments about the soup and alcohol itself. The author encounters two problems:

  1. Alcohol doesn’t remain alcoholic in cooking due to ethanol being boiled away.
  2. Alcohol mixed with food often tastes nasty.

He solves the first by adding the booze last, and he solves the second by serving up food that is heavy enough to mask the taste of already tasteless vodka.

For those who are too lazy to make soup, he suggests just adding vodka to the creamy tomato and roasted garlic soup served in the dining hall.
