Which Wine for Cooking?

Here’s a good brief Q and A regarding what wine to use for cooking. As has already been instilled in me by watching the Food Network, you should only use a wine that you would drink for cooking. Never use cooking wine unless the recipe actually calls for it. However, many recipes simply call for “white wine” or “red wine”. What to use then?

Bill Daley of The Chicago-Tribune recommends “any wine that’s young, cheap, and flavorful”. For whites, try chardonnay or pinot grigo. For dry reds, try cabernet sauvignon, merlot, and syrah/shiraz.
