Cheese and Wine

Articles about pairing wine and food are really starting to bore me, but this article about matching cheese with wine is actually somewhat interesting. The gist of it is that some science dude found that cheese suppressed nearly all flavors in wine. I figure this can be interpreted in one of two ways:

  1. Buy the cheap stuff and eat cheese with it. If you can’t tell the difference in flavors in wine due to cheese, then there’s no need to splurge!
  2. Buy the expensive wine and forget about the cheese. I’m lactose-intolerant anyway. (You may want to stay away from me when and soon after I eat cheese.)
